Saturated fats are GOOD for you. I challenge you to find any article from any source which backs up your claim that coconut oil is unhealthy on ANY level, including it's saturated fats levels. Coconut oil does NOT cause diabetes nor does it have any impact on insulin resistance or blood glucose levels.
Coconut oil does not break down in high heat, and thus cannot produce transfats.

Populations which eat a lot of coconut oil are healthier than those which use mostly vegetable oil. Saturated fats are not only good for you, they are REQUIRED for a healthy body. Virgin coconut oil (cold pressed, unrefined) reduced total cholestrol, increased HDL and lowered LDL. I know this because I am living life on the other end of low carbing and I am healthier than many 25 year olds.
It shocks me that so many people who wish to eat and live healthier do not properly research the foods they eat (and those they avoid). If you want to scrutinize a dietary lifestyle, then focus your sights on vegetarians and vegans. It is they who are following an unnatural dietary regimen for human beings.
If you have real evidence to present, backed by real world data and the nutritionists who have thoroughly tested coconut oil (as I posted in my links), then please do. Otherwise, you are just blowing the dog whistle. Vegetable oil (made from corn) is Big Agro's product. Each person who switches to coconut oil stops buying vegetable oil and that is their motivation. Big Agro is not about to start growing coconut groves and lost their substantial investments in corn and soybean oil production.
