I did it again. This time I made lentil soup. I didn't follow any recipe, just tossed lentils and some other stuff in boiling water.
I tend towards this:
It comes out nicely.
- 2 tablespoons extra-virgin olive oil
- 2 yellow onions, diced
- 3 carrots, peeled and diced
- 2 ribs celery, diced
- 2 cloves garlic, minced
- 1 cup brown or pink lentils, rinsed
- 1 15-ounce can diced tomatoes with juice
- 8 cups chicken stock
- 1 lemon, sliced
- Kosher salt and freshly ground pepper
- 2 handfuls of kale and/or spinach
I find lemon juice adds a "freshness" to the flavor of many thing. I love it in soups!It gives it a little lemon bite that I like (I also like cream of lemon chicken rice soup).
It's funny but that's exactly what I did. I knew I still had some bags of lentils in the cupboard. When I was at the supermarket I decided to buy some stuff to make soup with them. I had never made lentil soup before and I also didn't look up any recipes. I bought celery, carrots, leeks, onions and some flat leaf parsley. Aside from those things I added some szechuan pepper corns and salt. I started by tossing some bouillon cubes in, beef, chicken and vegetable. After tasting I added a bit of cajun seasoning as an experiment, I don't know whether it helped or not. The end result was quite edible though, better than I thought it would be while I was making it. (the smell wasn't very good at first)

The last time that I had lentil soup was around Christmas day. Mom had put carrots the size of sex toys in the soup. When I ate the soup the flavors had mixed nicely and thesex toyscarrots were soft as jelly.
